1. Put 5g Sencha into the shiboridashi.
2. Cool boiled water down to 65℃ and pour it (100 ml) into the teapot.
3. Steep for 30 seconds and pour an equal amount of tea into each cup.
❖ This tea goes 3 steeps. For the second and third infusions, use hotter water and brew shorter.

The tea is based on umami and a light grassy taste, with a slight secondary sweetness. A light mineral note. Contrary to the vendor's recommendation, I prefer the 60-90 sec. steeping time of the first infusion, as then the umami gains intensity and the taste is very close to gyokuro (mineral, miso). Marginal bitterness, practically no astringency. Nice price/performance ratio.

This is lovely! This one is really fruity and one of the sweetest senchas I've ever drank. The leaves are of wonderful quality and very deep, vibrant, fresh green. Liqour looks spectacular. Dry leaves smell of seasoned meat, wet leaf smells of fresh fruits. Liqour aroma of sweet summer fruits and silky smooth milk. Very low astringency to none. Fruity, sweet goodness in cup. I used 4g/65C for 50sec first infusion, 15sec second infusion and 70c 1min third infusion.
