Taiwanese oolong tea / "ORIENTAL BEAUTY"
Dongfang Meiren Superior can be grown in very limited tea farms even in a country of tea, Taiwan. This tea is picked for just one week of early June. Besides, even a skillful tea picker has to spend one day to gather the tea which will become a final product of just 500 g. This special tea is made of only the hand-picked leaves whose sap is sucked by Jacobiasca formosana, therefore, no agricultural fertilizer is used. As fertilizers, tea farmers use straw and tea leaves which are cut off, but no chemical fertilizer is used.
This tea is one of the bounties of nature from the only healthy tea trees which firmly spread its roots deep in the ground.
It has aroma of a ripe fruit and honey, with a flavor like a red tea. It very well goes with cakes using butter cream such as a Swiss roll.

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse. Put the tea leaves in your vessel, pour hot water over them and then discard the water quickly. This step is for "waking the leaves" a little bit.
STEP 3) Brew. Pour boiling water on your rinsed tea leaves and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.
❖ After the first few infusions, you can increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
