Taiwanese oolong tea
While traditional style dong ding oolongs are medium fermented and roasted on charcoal roaster (this is called "yin" roasting), Orthodox Dong Ding oolong is strongly fermented and roasted over an open fire ("yang" roasting). This quick and intense roasting technique boosts the aromas, making orthodox dong dings exceptionally flavorful. This dong ding tea was roasted over charcoal made from the Longan fruitwood which is a plus in the final flavor because Longan fruits are sweet and their sweet fruitiness seeps into the tea leaves.
This tea is sweet in both its fragrance and flavor. The leaves steam sugar-coated almonds and honey nuts, the aroma so strong that it fills the room right away as we open the teapot. And the flavor does not lag behind. It is as sweet as the scent. It opens toasty-nutty which quickly turns into gentle, creamy vanilla. If almonds and macadamia nuts were coated in moderately sweet vanilla sugar, they would be the snack embodiment of this tea. It is surprising how long the vanilla note stays in the cup.
The liquor is a beautiful gold, and the texture is astonishingly silky. The tea goes several steeps, and interestingly, the more we infuse it the sweeter it becomes. It reaches its peak at the 3-4th infusion.

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse. Put the tea leaves in your vessel, pour hot water over them and then discard the water quickly. This step is to "wake the leaves" a little bit.
STEP 3) Brew. Pour boiling water on your rinsed tea leaves and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.
❖ After the first few infusions, you can increase the steeping time (to about 40-45 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.

This tea is on the expensive side so I don't drink it often, but wow it sure is complex. In terms of oxidizing it's balanced comfortably in the middle of a red and a green, with depth and freshness balanced. Due to the charcoal roasting the smoke note lingers in the background and make the caffeine level just right so that it can be enjoyed at any time of day. Ideally suited to afternoon and evening as you will not be kept up. I wouldn't go pairing this with anything so you can really taste all the complexity. Also this goes for steep after steep so you either need to be a prolific tea drinker or get ready to share.
