Autumn Gyokuro Blend from Horii Shichimeien
Before the era of air-tight packaging, tea farmers in Kyoto wrapped their tea, and put it in large "tsubo", vessels, which they sealed with paper, and then carried to Mount Hiei to keep it cool during the hot and damp summer. In Autumn these vessels were carried down ceremonially. To pay tribute to this old tradition, the "chajin", master blenders make special seasonal tea blends that recall the flavor of the traditional, mountain-matured green tea.
This beautiful, bright green gyokuro is both savory and verdant. The scent is very vegetal, recalling fresh cucumbers. The flavor is mellow but charismatic leaving a mild nutty aftertaste. Overall it is a fresh, grassy, and thick gyokuro with a faint bitterness that adds to its refreshing qualities.
For the second flush, we recommend a higher water temperature (about 65°C) and a shorter steeping time (50 seconds). if you prefer both steeps to be similarly thick, you can make the first flush shorter.

1. Put 8 g Gyokuro into a small teapot.
2. Cool boiled water down to 60℃ (140ºF) and pour it (100 ml) into the teapot.
3. Steep for 90 seconds and pour an equal amount of tea into each cup.
❖ This tea goes 2 steeps. For the second and third infusions, use hotter water (about 65°C) and brew shorter (50 seconds).
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
