Green tea from Kyushu Island
A calming, fragrant sencha from Yame city, Fukuoka pref.
Both the scent and the flavor are umami-rich with the mellow notes of konbu. Compared to Uji green teas, Kyushu teas are roasted stronger, which is apparent in the main notes, mostly resembling fragrant crop fields and sweet, grilled corn. The aftertaste is sweet and toasty-almondy. While Uji teas are more on the refreshing side, this one is mellow and relaxing.

1. Put 5 g of Sencha into a Japanese teapot.
2. Cool boiled water down to 80℃ (176ºF) and pour it (200 cc) into the teapot.
3. Steep for 40 seconds and pour an equal amount of tea into each cup.
❖ This tea goes 2 steeps. For the second infusion, use 85℃ (185ºF) water and brew for 20 seconds.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
