Tencha is a shaded green tea used to make matcha. Grown like gyokuro, it has its flavor and vivid green color, but has a unique, soft smoothness to it. It is silky and light, but rich and flavorful. Unlike other Japanese green teas, after the steaming of the harvested tea leaves, they are not rolled.
It is sometimes used for cooking. Even just on top of rice, in a salad, or mixed in a dressing the flavor comes out deliciously.

Tencha Shichimei no Mukashi is a concentrated journey which can provide three intense, sweet and pampering brews. Every single captivating drop spoils us with its long, flavor-rich finish, reminding us of a high-quality Gyokuro. Its sweetness, intensity of flavor and body far exceed the Agata no Shiro Tencha that is ranked beneath it. There are no grassy, astringent or bitter tones in this whatsoever. How to prepare

Put 5 g of tea leaves into the teapot.
1, Use 50ml of water at 50°C for the the first brew, with 3 minutes of steeping time.
2, Use 40ml of water at 65°C with 90 seconds steeping time.
3, For the third and final brewing, use 40ml of water at 80°C with 1 minute of steeping.
During brewing, it is advised to swirl the tea pot gently. This preparation helps the broader leaves to have ample contact with the modest amount of water.

This is our recommended preparation. Feel free to try adjusting this method to your personal preference.

A very silky tea that preserves its thickness through the 3 recommended brews. It has a powerful rice-like, nutty smell and a very umami flavor. It's an excellent alternative for matcha lovers.

Tencha Shichimei No Mukashi - initial scent of dry leaves in a warmed vessel gave rise to freshly cooked rice. For its uniqueness, I am giving it 5 stars. The first steep has a robust and rounded umami flavor without overwhelming the taste buds. It has a medium salty finish that coats the tongue and mouth with a lingering taste of freshly cooked rice. It coats and stays in the throat. It does not give an impression of green flavors but definitely of freshly dried rice straws. The impression of the cha-chi from the initial sip rises to the mind, sharpening the vision. This was steeped in a 50 ml (1.7 oz) capacity shiboridashi with 3 grams of leaves at 50 Celcius water. I favor the mildness of the caffeine rise in this tea - which is slow and even. By the third steep with 3 grams of tea, it begins to lose its flavors. I would recommend this for anyone who does not like the green flavors in Senchas but yet would like a green tea. I did steep it yesterday in an 80ml (2.7 oz) shiboridashi with 5 grams of tea. I found that the tea's flavors with 5 grams at 80 ml fluid was sharper at 3 grams but the caffeine rise was too marked for my liking in comparison to 3 grams and with a quicker pour for the initial steep. A definite conversation piece for tea connoisseurs and novices who are embarking out of the Sencha realms.

I absolutely love this tea. Whether warm or even cold steeping with ice, it has such a thick richness. Great umami and potato-sticks flavor. For a while it was my traveling tea and I brewed it in a small gaiwan, small hōhin, large flat shiboridashi and other pots or whatever was around... and every time it was delightful (but I don't recommend it when traveling because precise water temp is critical for it). Personally, I don't like the higher temps on this one.. anything over 75ºC has a little too much astringency for my tastes. But that's not problematic at all for me on this tea because the lower temp steeping is so perfect. Also, I love the smell & taste of this so much that I sometimes mix a little in with a cheaper tea. And I'm not beyond just eating a raw spoonful of it or sprinkling it on rice or other dishes. Love it.

I followed the recommended preparation and the result has been the apotheosis in three drinks of these succulent leaves. Soft, heady and round taste. Notes of toasted pumpkin seed. Without a doubt the best Tencha tasted so far. Drink moderately because it is addictive :0).
