Autumn Matcha Blend from Marukyu-Koyamaen
Tsubokiri Matcha, made from buds of excellent quality, is an exquisite Koicha tea, which is gorgeous even when prepared as a thin tea. When prepared as a thick tea, a rich, creamy, and round-bodied flavor is unlocked, reminding of the aroma of roasted pumpkin seeds and pumpkin, with a creamy, milky, and sweet aftertaste. As Usucha, it is a light, green, fresh, umami-rich, particularly sweet milky Matcha which tolerates water at lower temperatures; it does not become bitter.
Traditionally, before the era of air-tight packaging, tea farmers used to keep their tea in large "tsubo", vessels. In Kyoto, in the summer season, they sealed the tsubo with paper and carried them to Mount Hiei. The mountain was cool, keeping the precious Uji tea fresh and aromatic. The farmers kept their Tencha in tsubo all year round and only took out the amount they wanted to grind for matcha. In late October or the beginning of November, the seal of the jar with new tea plucked in spring is ritually broken and the new tea is used for the first time. The ritual of breaking this seal of the tea jar is called "tsubokiri".

Warm up tea bowl with hot water, then dry it with a cloth.
Sift 4g (0.8 US tsp, 3 teaspoon or 4 chashaku scoop) matcha powder into warm and dry tea bowl.
Pour 30 ml 80-84℃ (176°F) water over the matcha powder.
Gently knead with a suitable chasen (tea whisk) until all lumps are gone.
Freshness is the most important thing for the enjoyment of Matcha. Drink it fast, before it cools.

I'm very positively surprised and totally didn't expect it, but Tsubokiri Matcha immediately jumped into my top 3. It does a great job as a usucha which is really light, with a complete lack of bitterness. This is the first time I've drunk matcha where the milky flavour is so prominent, with a sweet aftertaste that falls more into fruity than vegetable note. Drinking it in an autumnal setting with a view of the leaves turning red and yellow makes you take as much as you can from the moment, a real mindfulness. I would recommend this matcha to anyone who prefers lighter flavours with a noticeable sweetness, you won't be disappointed! My initial thought when first opening this matcha was that it has a very similar smell to the Eiju matcha: creamy, earthy and mellow. I have tried this seasonal Autumn matcha in its three forms. As usucha: it has a very dynamic flavor of some moderate astringency combined with some sweetness. As koicha: it has a rather potent savoriness to it with deep umami flavor. As a matcha latte: its natural milky, creamy, pumpkin essence really shines and is honestly my most favorite way to drink this specific type of matcha.

Really enjoyed this matcha. When dry it has the most delicious sweet fruity aroma. It reminded me of sweet potato or pumpkin. Perfect for the autumn season. As usucha it's smooth and milky but well balanced with a strong deep robust flavour. As koicha it has a pleasant but strong harshness rounded out with a bit of nuttiness. Not astringent at all. Will buy this again when it's in season.

I found this site at a review on Amazon when I was about to buy some Cerimonial grade Matcha, after buying so many different and bad Matcha online I thought of giving Sazen a chance. This is probably my favorite matcha I have had. The taste is superb. Makes me feel very relaxed and focused. I wish it was available all year. Considering how good this is, the price is fairly low. Highly recommended. I've made usucha and koicha and both were great.

Too bad this matcha is only available for a limited time. It is a fantastic value and an excellent matcha regardless of price. It is smooth with great color, dark in the middle of the bowl with a bright, light green ring around the edge. Very unique in looks and taste and it didn't have any bitterness at all. So far I have only made this with cold water. It whisked perfectly with no lumps. I liked it so much I made three bowls one right after the other. If you don't like the bitterness present in many types of matcha you need to try this one. I've never had one quite like it. Perfect 10!
