Autumn Matcha Tea Blend from Kanbayashi Shunsho
Kuchikiri seasonal matcha from Kanbayashi Shunsho.
Kuchikiri means breaking the seal of the jar. After harvesting, tea leaves are kept to mature in sealed clay jars in chambers from early Spring, and these jars are first opened in Autumn. This is how fall season tea came to be called kuchikiri tea.
TASTE NOTES:
It is an exceptionally pleasant autumn-inspired usucha. It has a medium body and a well-balanced flavor. It is smooth and mellow, with subtle woodsy and nutty notes, reminding of baked chestnuts. Initially, its mild spiciness has a slight bite on the tongue, but this quickly smooths out without turning bitter. Instead, it becomes velvety and soothing.

The meaning of Wakamori no Shiro 若森の白:
若森 "Wakamori" can be interpreted as "young forest" or "fresh forest," where 若 "waka" means "young" or "fresh," and 森 "mori" means "woods."

STEP 1) Put 2g (0.4 US tsp, 1 teaspoon or 2 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 75 ml (2.4 fl oz) 85℃ (185°F) water over the matcha powder.
STEP 3) Whisk with a chasen (tea whisk) until foamy.
❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)
