Fukamushicha is made of high-quality green tea leaves exposed to direct sunlight. After the harvest, the tea is steamed longer, which results in fine leaves, more tea dust, rich umami, and a relatively high caffeine level. Compared to regular green teas, fukamushicha can go more steeps.

How to prepare

1. Put 5 g of tea leaves into a Japanese teapot.
2. Cool boiled water down to 70℃ and pour it into the teapot.
3. Steep for 30 seconds and pour the equal amount of tea in each cup.
The same tea leaves can be used three times. Use hotter water for the second and third infusions.
Used tea leaves should be immersed for a shorter time.

The taste of tea is a matter of preference, so try infusing tea in several ways and find your favorite taste.

I have reviewed this tea several times since 2016 and rated it 5 stars every time. It has been extremely consistent from year to year even in bad seasons when other teas have not been so good. It has also remained fresh when purchased later in the year unlike teas from most other vendors which noticeably degrade in freshness as the months pass. This order is as flavorful and aromatic as previous purchases have been, still a 5 star tea and highly recommended.

Chiran Tokujo Fuksmushicha (CTF): The dry tea has a mild scent of peaches. It is processed to a much finer cut the brew yielded more of the tea particles/dust into the soup forming tea clouds. (Image is of CTF brew) Package brewing recommended at 70 Celsius for 30 . seconds. The taste is quite refreshing especially for a first morning cuppa. The caffeine rise is almost undetectable - slow and calming- clears and focus the mind without the jitters of urgency. The tea soup has a hue of Chartreuse, medium clarity and a tinge of sparkle with tea clouds at the bottom of the cup. The second cup yielded a muddier hue of green with more obvious tea clouds from the tea particles. This tea does not strain well with the silken mesh I normally use so I resorted to the finest metal mesh strainer. You will observe as the tea clouds begin to gather concentratedly at the bottom of the cup, the nature of the tea particles begin to change in how it gathers - becomes stringy and the sparkle of the brew is somewhat restored. The flavor is smooth on the first brew with a mild chlorophyll taste that is more obvious on the second brew. The second cup has a very slight astringency at the back of the tongue and a hint of seaweed. The astringency is more obvious when the tea is cooled. This tea was recommended by Sazen. While it is eons away from the usual steamed Sencha tea from Kagoshima that I normally drink and not easily something that I would substitute, this CTF can stand on its own for a good morning cuppa. I like the mildness of the caffeine rise. I would like to taste this from their 2022 stash. Thank you for the suggestion. Asamiya Yabukita: Initial impression gave a Mild salty flavor of the sea with a clean hint of green. The scent of the tea is again a very mild green of fresh leaves. The second brew opened the leaves a little more and yielded a bolder salty flavor and the brew had a more intense greenish hue to it. This was sample sent probably from the 2021 tea harvest. The caffeine content is pretty strong just from the initial 1 oz cup. Clear tea soup - no dregs during the 60 second brew from the shiroboridashi to the justice pot. Water was at 80 deg Celsius as specified. While I do like the tea but it is not a choice that would compel me to want to buy it as part of my seasonal tea stash. It is great to have as a First Aid tea stash for a quick and rapid pick up. It has all of what I look for in this Sencha style tea - clarity and sparkle in the brew , clean tea soup with no evidence of being over processed that when you brew it the dregs don’t strain properly. However, it lacks the bolder greener flavor that I favor in a Sencha tea. The caffeine spike is too strong for me especially for a morning cuppa - it hits the adrenals quite rapidly and I would suggest this if you had a night of overindulgence in food and alcohol hence the First Aid stash. Thank you to Sazen for this sample. The package it came in was elegant and very thoughtful.

Brief (few seconds) steeps in 70 Celsius water. Liquor is opaqued bright green in color. Taste is a nicely pronounced sweet umami with no bitterness. Mouthfeel is slightly sticky, encouraging to drink more. Wet leaves are freshly green, giving off a mild aroma of cooked seaweed. Strength of infusion starts to mellow down by 4-5th infusion, and still no sign of bitterness with a longer steep on the 6th infusion.

This a very fragant and refreshing tea. Strong flavor that lingers and last a long time even after several brewing. I love the smell nori in the tea leaves. Excellent tea.

Nothing has changed since my 2017-11-12 review. This is still an exceptional fukamashi and is the most consistent one from year to year that I've ever had. It deserved 5 stars in 2016 and 2017, and it still does in 2018. I just did four infusions in the 100cc shudei kyusu by Jinshu that was also included in my latest order. There was still plenty of color and flavor in the fourth brew. Whoever produces this tea has exceptional process and quality control. Sazen's pictures of the brewed tea perfectly represent what I just brewed myself. Awesome!

A previous fukamashi I tried from another excellent vendor this year was not very good; it was loaded with dust and the taste was mediocre, as was the color. I thought maybe this was just a bad year for fukamashi. I decided to try Chiran again (it was great last year) and was very happy to find it was still a fantastic fukamashi. It has very little of the tea dust that is so common with this type of tea, low enough that I have no trouble with clogging when using any type of ceramic filter (providing you don't let the brewed leaves sit in the pot for too long). Chiran has a deep green color and is not too cloudy. It's taste is excellent and it is easy to brew, especially for a fukamashi. It has brewed perfectly every time!

I prepared this tea as a gyokuro (started with 40-50 ?C water) and I could enjoy the first 2 infusions as a very good gyokuro-like tea. With further infusions its bitterness came forward that was quite smooth, not strident at all. This tea has a rich, round, full-bodied taste. The best fukamushicha I have ever tasted!
