A matcha blend commemorating the 400th anniversary of Sen no Rikyū, the most impactful influencer of chanoyu.
This tea is favored by Hōunsai, the 15th-generation grand tea master of Urasenke.
Recommended for making thin tea (usucha).
It has a softer scent than the Koicha Soumei no Mukashi, its thick tea (koicha) counterpart. The vanilla note is present here as well but there is also a strong fresh, lush, and verdant flavor. If Soumei no Mukashi is the majestic legacy of Rikyǔ, Kouko no Shiro is everything that is the wabi-sabi aesthetics.
It is simple yet powerful. It does offer a pleasant, easy- to-drink matcha experience, which aligns with the brand's general profile, yet boasts a strong green flavor that gives it a bold, charismatic edge, which is undoubtedly unique. Its somewhat unrefined but one-of-a-kind character is what imparts the unique wabi-sabi feel.

How to prepare
HOW TO PREPARE
STEP 1) Put 2g (0.4 US tsp, 1 teaspoon or 2 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 75 ml (2.4 fl oz) 85℃ (185°F) water over the matcha powder.
STEP 3) Whisk with a chasen (tea whisk) until foamy.
❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)
First thing: I'm very much a matcha beginner. I drink it mostly for the effects, not the taste; but I'm exploring to figure out if there's a matcha I also *enjoy* drinking.
That said, this matcha tastes like "nothing"... but in a good way! The first few sips taste just faintly green; but as I drink, the green flavor deepens and the creaminess and subtle sweetness come through. To use a corny metaphor, drinking this makes me think of standing in a temperate rainforest and just breathing: the first thing you notice is the fresh, clean air; then the scents of the green trees and damp mulch become more apparent the longer you pay attention. The finish, also subtle, is clean and faintly sweet.
Overall: mild, but rewards mindful drinking. I think this would be a good introduction to matcha, since the flavors are not very strong. I intend to buy more of this!
