The meaning of Senju "千寿" :
「千」is the character for “thousand”, while 「寿」often connotes longevity of life.
This name has been given to this tea in hopes of longevity for a thousand years and more.

HOW TO PREPARE
As Koicha:
STEP 1) Put 4g (0.8 US tsp, 2 teaspoon or 4 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 30 ml (1 fl oz) 80℃ (176°F) water over the matcha powder.
STEP 3) Gently mix with a chasen (tea whisk) until creamy.
❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)

It is pretty bad as Usucha, and disappointingly unfulfilling as Koicha. There's no complexity of flavor. The taste reminded me of soy milk, whereas my husband thought the palate overpowered by bitterness.

Now that I've tried all the Hokoen matchas, the main discerning note is their lack of sweetness. Horii Shichimeien and Marukyu-Koyamaen have very recognizable sweetness after a certain price point - particularly once you approach this level. This matcha had notes of toasted rice and barley. I found it much more enjoyable than the Shoukaku, but it's not worth the price per gram in my opinion. Overall, like all Hokoen matchas, this is more of a savory matcha just, which just isn't my thing.

Excellent balance of flavors! It is smooth, creamy, and has zero astringency. I just wish it had better packaging.

I've been advised to start drinking matcha with Senju. Nice decision, very full but subtle taste, no bitterness at all. I think I'll order another one before I move to a higher grade, I am afraid even a higher grade koicha wouldn't give me the same experience.
