The meaning of Shoukaku "松鶴" :
The two characters that make up “shou” and kaku” stand for “pine” and “crane” respectively. Pine trees symbolize vitality (due to their nature as evergreens that maintain their foliage even in winter), while cranes are often associated with happy marriages.
It is sometimes said as well that the calls of cranes are capable of reaching all the way to the heavens. With this imagery in particular, of the crane's farreaching heavenly call, the tea maker is making a symbolic wish for this tea to become ever more widely known.

How to prepare

HOW TO PREPARE

As Koicha:
STEP 1) Put 4g (0.8 US tsp, 2 teaspoon or 4 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 30 ml (1 fl oz) 80℃ (176°F) water over the matcha powder.
STEP 3) Gently mix with a chasen (tea whisk) until creamy.

❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)

All I can say is YUMMM! I randomly purchased this tea as I was curious on tasting this brand, and I'm glad I did. Safe to say that this is one of the most delicious Koicha I've purchased. It's powerful (but NOT too intense) and sweet. It has no bitterness & no astringency which was really nice - and it left with an umami aftertaste that just keeps you thinking about it. No unpleasant seaweed or fresh cut grass aftertaste either - hard to describe, but just DELICIOUS. Try it thick as Koicha & you won't regret it

Sazen Tea has described Matcha Shoukaku perfectly. If it’s possible to say a matcha is ‘perfect’ this is IT. It is great as koicha, thick and sweet and very strong and powerful but not in any way bitter or astringent. This matcha is very versatile in that it makes an amazingly delicious Usucha as well. As Usucha it is still very strong and powerful with a beautiful sweet umami and a very thick foam that is easy to froth. Both preparations reward you with a beautiful aroma as well. Shoukaku is a joy to drink and very ‘intoxicating’ in every sense. This is definitely a gem and a value for the money. I’ve tried other brands that were three times more expensive and it wasn’t as good as this. The only thing I don’t like is the plastic bag it comes in, but this is just a petty complaint, since the 20g container is only good for about 12 portions of Usucha (that’s how I make it most often), it’s gone way before it can go bad. Just like it is described: “It’s a great choice for those looking for something special in a koicha (and as Usucha as well), exceeding the ordinary. It’s a true culinary delight, which is sure not to disapoint’. This is matcha at its best! EXTRAORDINARY!!

My first Matcha from Hokoen and I was delighted. Very vibrant colour and a wonderful aroma. Makes smooth thick tea and delivers a semi bitter aftertaste. Recommended.
