This tea has a versatile personality, with every infusion showing off with something different. The first infusions are gently smokey with roasty main notes, almond flavour playing the main role, with cereal, toast and floral undertones in the background. After the second infusion the roles change, the creamy-sweet, floral character of Jin Xuan comes forward and the nutty-charcoal notes fade to the background. This tea has a warming, fuzzy feel to it, and easily goes 7-8 steeps.

The first most distinguishable aroma of the brewing tea leaves are roasted nuts and char, which gradually gives way to light citrusy tones. After a couple of seconds the freshness fades and gives way to a woodsy-sweetness.

The tea soup is dark gold, and feather light, with sweet-woodsy, but still very clean mouth feel in the beginning and creamier, floral after taste at the end. Astringency is absolutely not a thing here, even if you do long infusions, the tea won't get bitter.

How to prepare

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse. Put the tea leaves in your vessel, pour hot water over them and then discard the water quickly. This step is for "waking the leaves" a little bit.
STEP 3) Brew. Pour boiling water on your rinsed tea leaves and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.

❖ After the first few infusions, you can increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
