How to prepare

1. Put 5 g of Sencha into a small Japanese teapot.
2. Cool boiled water down to 60℃ (140ºF) and pour it (150 cc) into the teapot.
3. Steep for 45 seconds and pour an equal amount of tea into each cup.

❖ This tea goes 3 steeps. For the second and third infusions, use hotter water and brew shorter.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.

One of Horii Shichimeien's better offerings to my taste buds. I also find this does best with more leaf, less water, less time, hotter water. I use about 3 grams in my 50ml vessel, with 75°C water, for 30 seconds initially. Gives a great umami body with slight snappy astringency that keeps this refreshing when brewed as mentioned above. The taste leans heavily in to "steamed veggies" with steamed spinach, steamed cabbage, and grass up front. There's a creaminess beneath this reminiscent of kabusecha, but faint enough that it's definitely sencha. This rounds out the astringency and keeps it delightful the whole way through. When brewed as recommended, noticeably less bitterness and more of a "buttery lettuce" taste takes center stage. It's not a complex sencha, but an enjoyable one nonetheless, thanks to its umami body and delightful creaminess, and versatility with how you choose to brew it.

Very pleasant tea with no bitterness and mellow taste. Surprisingly, it goes well even in the evening. Reminds me Agata no Mori but with even less bitterness. Smooth texture. The liquor is of a pear color.

Preparing this tea at a low concentration is a waste of its potential. For me, a dosage of 5 g/100 ml, 60 °C, 1 min. for the first infusion has worked well. The infusion was intensely creamy-umami, a bit brothy, slightly grassy, with a pronounced secondary sweetness. I also prepared it as a gyokuro, 1 g per 10 ml, 40 °C, 3 min. and it was delicious. The great advantage of this tea is the very low bitterness, which allows you to enhance other flavours by increasing the concentration of the tea. (I used water with a TDS of 322 mg/kg, providing a fuller infusion.) Excellent price/performance ratio.

This was my second Shuppin tea and I like this the best. Brewed 7 grams of tea with 60 Celcius water in a 50 ml vessel for 1 min and allowed it to cool completely. The initial flavor of the tea was deep, robust, with an initial hit of well-rounded sweetness and very soothing - opened the senses. On the second brew it retained about 45% of its sweetness with a mild hint of bitterness at the tip of the tongue. Second brew was warm. The tea coats the mouth with a lovely finish. The tea soup had a lovely clarity and sparkle even on the second brew. It yielded a deep yellow with a hint of chartreuse. The wet leaves were reminiscent of the scent of after a spring rain on lush greenery while the dry leaves had a deep green flavor and were singularly long and compact. There were no tea clouds that formed in the bottom of the tea cup - tea dust was extremely minimal. Caffeine had a slow rise and even rise. This was worth the price for 100 grams. Per usual Sazen's service and speed of shipping is always stellar. Thank you.

Really good tea! The dry leaves are absolutely beautiful! It has a very unique taste. Sweet and astringent at the same time, with somewhat of a kick, as if it had a hint of ginger in it. Has a flowery, fruity aftertaste that reminds me of pineapple.
