Fan Zi Tian has one of the highest tea production volume among the Shan Lin Xi tea districts in Zhushan Town. The soil in this region is notably deeper compared to other tea districts, allowing tea plants to establish extensive root systems. Having plenty of rain between December and April is very important for a good tea harvest. Even though this year was unusually dry and the drought had a negative impact on the harvest in many regions, thanks to Fan Zi Tian's special environment, its tea plantations were affected less. While other tea districts' harvest dropped to 60% compared to a normal year, Fan Zi Tian had almost the same yield as before. After the harvest the tea leaves are exposed to direct sunlight which help them develop the unique, aromatic flavors Shan Lin Xi is famous for.

TASTE NOTES:
The aroma of the tea is creamy-spicy and sweet, surprisingly so. The combination of the exciting, woodsy spiciness and the sugary sweetness makes this tea a true delicacy.

How to prepare

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse. Put the tea leaves in your vessel, pour hot water over them and then discard the water quickly. This step is for "waking the leaves" a little bit.
STEP 3) Brew. Pour boiling water on your rinsed tea leaves and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.

❖ After the first few infusions, you can increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
