Hekisui is a surprisingly full and sweet matcha, which should be brewed thickly, with as little water as possible. Its characteristic sweetness, velvety full-bodied flavor and bright aroma elevate it above lower grade teas and sets this incredibly delicious tea apart. And if you are looking for something unforgettable, the Houju of this family is truly exceptional.
The meaning of Hekisui "碧翠" :
Both "ao" (碧) and "midori" (翠) have a reading meaning bluish green. However, Ao (碧) can also be read as "Midori", which additionally means green.
The color name "Midori(翠)" itself may have originated from the color of the Kingfisher's feathers, which are a complex combination of blue and green hues.

STEP 1) Put 4g (0.8 US tsp, 2 teaspoon or 4 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 30 ml (1 fl oz) 80℃ (176°F) water over the matcha powder.
STEP 3) Gently knead with a chasen (tea whisk) until all lumps are gone.
❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)

Now that I've tried nearly every koicha matcha on Sazen, I have to say that this matcha blew me away. Usually I stick with Marukyu Koyamaen Matcha or Horii Shichimeien, but was interested to see how their high quality matcha stands to the two other brands. While matchas at this price range tend to lack that bitterness of lower quality ones, this possessed a long lasting sweetness coupled with umami that you really only find if you spend a bit more. This matcha has the best characteristics next to the Shichimei no Mukashi (for me) but at a price point that's pretty much unrivaled. It's a huge step up from the Ukitsu from Hekisuien and absolutely worth it.

This is my second purchase of Hekisuien Matcha and this brand is rapidly becoming my daily Matcha. Always good quality, with a lovely aroma and great taste. Excellent for making Koicha but I have also used it for Usucha. Nice aftertaste too. Its that good that it is difficult to seperate from the Honju!
