Shincha (新茶 or "new tea") is a Japanese green tea that comes from the very first harvest in Spring. Shincha is made from the softest, most tender tea leaves. When the sprouts (the 3-4 leaves on the top) reach a mature enough age to harvest, they must be picked and processed immediately.
Shincha is popular for a reason. We can appreciate the refreshingly green flavor of the first leaves only once a year and only for a short time. But it is not just the beautifully bright jade green color and the verdant flavor that makes Shincha special. It is exceptionally rich in vitamins and antioxidants, so they say the more Shincha you drink, the longer you live.

What to remember when brewing
Shincha is unique, so its preparation can be tricky. But pay a little attention, and you will get something truly rewarding.
Shincha is aromatic and can become bitter easily. Steep it at 80-85 ºC (176-185°F) for 30 seconds. You need full control over your brew, so don't forget to warm your teaware beforehand. A cold teapot might cool the water down below the ideal temperature and you might lose the umami. Keep checking the tea leaves. Shincha is not the kind of tea you want to oversteep. It quickly turns bitter, and the fine balance between the sweet and verdant notes and the gentle umami is gone.
When it comes to Shincha, the focus is on freshness. Due to the quick processing, Shincha only goes two or three steeps.
